In close reach to the Mediterranean sea, Domaine Gaujal de Saint Bon is a small operation run with extreme care by the mother-daughter team of Simone and Virginie Gaujal. They are proud upholders of the Picpoul tradition (the name derived from the French 'Picque', meaning sharp, and 'poul', meaning lip, translating as 'lip stinger'), and strive to make the truest and most expressive variety in the Languedoc region. The young vines at Domaine Gaujal along with the Mediterranean climate of this appellation gives its wines plenty of acidity. It has a enticing bouquet of sea air, white flowers with pleasing notes of gunflint. The palate is complex and intense with subtle tropical fruit hints and good length. A step above your average Picpoul with a softer edge than most others. As with most crisp whites this wine is ideal served with crustaceans and fish.
