Domaine Rolet Arbois Vin Jaune, 2013
Remarkable wine indeed! Vin Jaune is made exclusively with Juras Savagnin grapes in a way which defies the most elementary oenological laws: 6 years in three quarter filled oak barrels without ouillage (topping up) so that nothing disturbs the thin surface film, a veil of live yeasts, responsible for the yellow colour of the wine. The wine is then bottled in Clavelins holding 62cl, which corresponds to 1 litre of the wine harvested 6 years earlier. At this point the wine is almost indestructible and will age for 100 years or more. Rolet's vins jaune are benchmark classics, uncorked in advance and served at a temperature of 15 degrees, it develops inimitable, subtle green walnut flavours. This is a wine of tremendous body that is quite delicious with cheeses from Franche-Comte, Coq au Vin Jaune et Morilles, fish and poultry dishes in rich, creamy sauces.

Domaine Rolet is an Estate which reflects the image of an ever-changing Jura region, the Estate was created in the early 40's by Désiré Rolet. Today, his children have taken over and share the various responsibilities of the management of the Estate, Bernard and Guy take care of the vines and vinification; Pierre and Eliane are in charge of marketing, each one of them working with a view to the final objective of a wine-grower : the passion of obtaining, depending on the vintage the quintessence of the grape knowing that wine starts being made in the vineyard.
With modern air-conditioned wine-making plant where stainless steel vats, new barrels and oak casks are next to each other, from grape picking to bottling, they apply all of their know-how to the making of highly renowned vintages.

Jura is home to some rather particular styles of wine, including the sherry-like Vin Jaune – matured under a layer or flor of yeast to give a uniquely rich flavour, and the Vin de Paille – a sweet wine made from grapes that have been naturally dried on sheets of straw.
